Here are some ideas to make your weekend blissful!
Mulitgrain Pumpkin waffles
57 g quinoa flour (½ c)
57 g millet flour (½ c)
30 g teff flour (¼ c)
27 g tapioca starch ( ¼ c
tsp ground chia seed
1/4 tsp fine sea salt
3/4 tsp baking powder
tsp ground cinnamon
194 g (3/4c ) pumpkin puree
1 1/2 cups nut
milk of choice ( I used half almond and coconut)
2 tbsp walnut or coconut oil
1 tbsp coconut sugar
1 1/2 tsp pure vanilla extract
Heat your waffle maker to the manufacture's recommendation.* I own a 7 " Waring Pro and the perfect crispness for me is on 5.
In a medium bowl, combine first eight dry ingredients and mix to combine. In a separate bowl, wisk the last five wet ingredients until fully incorporated. Slowly add the wet ingredients into the dry until the batter is even.
Scoop 3/4 cup of batter onto waffle maker (again, I have a 7" so this is a perfect amount for that size) close lid and cook until timer beeps.
This makes 4 waffles and you can easily double the batter. Also the cooked waffles freeze well and can be reheated in a toaster.

Well any day for me is a great day to look at modern art but this Sunday, February 10th, the Denver Art Museum opens a new exhibition by Georgia O'Keeffe: Georgia O'Keeffe in New Mexico: Architecture, Katsinam and the Land. This is a side to Georgia O'Keeffe that most of us have not seen; her love for New Mexican tradition and culture.
Georgia O'Keeffe in New Mexico: Architecture, Katsinam, and the Land will be on view through April 28, 2013.
And for those of you who do not live in Colorado, Sunday night is the Grammy's! Now I am not usually super excited to tune in but this year's lineup is looking pre-tty good with performers like Jack White(LOVE), Justin Timberlake, who I was afraid left his song and dance for online home furnishing sites and Colorado's own, The Lumineers! Pop this or this popcorn and enjoy the show!
